Cooking with Comedians E3 – Mexican Casserole with Michael Salgarolo

Celebrity impressionist, Michael Salgarolo,  joins JR Bruno this week in the kitchen. He nails  impressions of several of your favorite, and likely least favorite, high profile people. As they stumble their way through the recipe, they discover some great tips so you can make it better at home.

The complete recipe is below:




INGREDIENTS:

2 pounds ground beef
2 Tbsp. olive oil
1 large onion, diced
1-2 jalapenos, finely diced
2 small cans tomato paste + 2 cans water
1 tsp cumin
2 tsp chili pepper
Salt and pepper to taste
1 Dark Red Kidney Beans, rinsed and drained
2 cups Mexican cheese or sharp cheddar
10 small corn tortillas, sliced thinly and fried
Lettuce, finely chopped
Chopped fresh tomatoes
Optional: olives, sour cream, avocados, green onion

DIRECTIONS:

In a large frying pan, heat the olive oil on medium heat. Saute the chopped onions and jalapenos for 4 to 5 minutes. Add the ground beef. Cook until well done; drain off any fat.

Add to the meat mixture the tomato paste, water, cumin, chili pepper, salt, and pepper (season to taste).

Place in a prepared (greased) large baking dish; add the cheese on top. Sprinkle with sliced and fried corn tortillas.

Bake at 350 degrees for 30 minutes, until hot, and cheese is bubbly.

Serve immediately with fresh ingredients: Finely chopped lettuce, tomatoes, olives, sour cream, avocados, and green onions.
