Escape the cold with a tomato soup and a jalapeño popper grilled cheese sandwich

It’s about to get cold. Real cold.

It’s about to get colder than a mother-in-laws kiss. It’s about to get colder than my ex’s heart. It’s about to get colder than a snowmans fart.

Cold.

When you pee outside it’ll freeze mid stream…do you…do you pee outside often?

Anyway, you’ll need something to warm you up. For that my favorite meal is tomato soup and a grilled cheese sandwich.

Below are easy recipes for both. You want easy when it’s cold out so you can go right back to bundling up…and maybe peeing outside?

Since it’s extra cold this week the grilled cheese sandwich is a jalapeño popper grilled cheese to really give you a kick and some extra warmth. It’s also mouth watering delicious.

Of course, you could could always skip the cold all together and trade the snow in for sand. I recommend going to somewhere warm and sunny Aruba. They call it “One Happy Island” for a reason. From the pristine beaches with calm water on one end to the rocky terrain with huge waves crashing against it on the other end. It’s perfect for ATVs, horseback riding, booze cruises, flamingo spotting, and more. 

Why did the sand go to therapy?

Classic Tomato Soup Recipe

Soup Ingredients

  • 3 pounds roma (plum) tomatoes, quartered
  • 2 tablespoons of tomato pastes
  • 1 yellow onion, halved and quartered
  • ½ red bell pepper, chopped
  • 3 tablespoons olive oil
  • 1 ½ tablespoon sea salt
  • 1 ½ teaspoons freshly ground black pepper
  • 3 cloves garlic, halved
  • 5 cups low-sodium chicken broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried parsley

Soup Directions

  1. Preheat the oven to 400 degrees F. Line a large baking sheet with aluminum foil.

  2. Spread tomatoes, onion, and red bell pepper in one layer onto the prepared baking sheet. Drizzle olive oil over the tomato mixture and season with salt and pepper.

  3. Roast in the preheated oven for 30 minutes; add garlic and continue roasting until tomato mixture is tender, about 15 more minutes.

  4. Meanwhile, bring chicken broth, basil, and parsley to a boil in a large stockpot; reduce heat and simmer.

  5. Put half the tomato mixture into a blender. Cover and hold lid down; pulse a few times before leaving on to blend until smooth, adding a small amount of the warm chicken broth if liquid is needed. Pour puréed tomato mixture into the stockpot with chicken broth. Pureé remaining half of the tomato mixture and add to chicken stock mixture, stirring well. Simmer together for 5 minutes.

Jalapeño Popper Grilled Cheese Sandwich

Sandwich Ingredients

  • 2 ounces cream cheese, softened
  • 1 tablespoon sour cream
  • 10 pickled jalapeno pepper slices, diced
  • 2 ciabatta sandwich rolls
  • 4 teaspoons butter
  • 8 tortilla chips, crushed
  • ½ cup shredded Colby-Monterey Jack cheese

Sandwich Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.

  2. Spread tomatoes, onion, and red bell pepper in one layer onto the prepared baking sheet. Drizzle olive oil over the tomato mixture and season with salt and pepper.

  3. Roast in the preheated oven for 30 minutes; add garlic and continue roasting until tomato mixture is tender, about 15 more minutes.
