Cooking with Comedians E5 – Spaghetti and Meatballs with Kenice Mobley

Love is in the air in Episode 5 of Cooking with Comedians by Newdie Mag. Kenice Mobley stops by, downs vodka, and cooks spaghetti and meatballs in a vodka sauce for a special date night episode.

The full recipe is below:


Marinara Sauce:

1 Cup Vodka
1 Pint Light Cream
2 TB olive oil
1 large onion, finely diced
1 celery stalk, finely chopped
1 bulb garlic, cloves peeled, crushed and minced finely.
4 28 oz. cans tomatoes
4 TB olive oil or softened butter
Dash of salt
Dash of pepper
Pinch of red pepper
½ cup red wine (optional)
Fresh basil

Saute onion and celery in a very large pot on low heat for about 5 minutes.
Add garlic and cook for another 2 to 3 minutes.
Strain tomatoes and add to pot.
Add olive oil or butter, vodka, and cream.
Add salt, pepper, red pepper and wine (if using).
If cooking with meatballs for pasta, add meatballs now.
Cook, uncovered, for approximately 2 hours. Check and stir frequently.
Once done, tear fresh basil leaves and add to sauce.

Meatballs:

½ Lb. Ground Beef
½ Lb. Ground Pork
2 Eggs
¼ cup water or milk
½ cup of Breadcrumbs (NOT Panko)
Dash of Salt
1 TB Parsley
2 Cloves Garlic (crushed and minced)
1 tsp pepper
½ cup Romano Cheese, grated.

Turn oven onto a low broil. Using your hands, mix all the ingredients in a large bowl. Once all ingredients are incorporated, form small balls (about 1” diameter). Wetting your hands will keep the mixture from sticking too much.

Take meatballs and place onto a cookie sheet and broil for 5
minutes. Turn them over and broil another five minutes. Then add to a large pot with one full recipe of marinara sauce (recipe is separate). Simmer in sauce for 2 to 3 hours on lowest heat on stove. Check occasionally and stir. Add water only if sauce becomes too thick.

For the Spaghetti: cook one 1 lb. package of Spaghetti according to package directions once Meatballs are done. Drain and DO NOT RINSE pasta. Add meatballs and sauce to spaghetti (this works better if you add the pasta to individual serving bowls and add the meatballs and sauce to each bowl.

Top with freshly grated Parmesan and parsley, if desired
